Etos is a cellar and bottle-aged, mature wine that is released in limited quantities as it is made only in exceptionally good vintage years and exclusively from the Estate’s best vines. In 2018 Etos Cabernet Sauvignon 2008 was released. The harvest year was excellent for the Cabernet Sauvignon variety, which is grown in a selected low-yielding vineyard area with arid calcareous and loamy soils located at an altitude of 450m. After passing through new French oak barrels, the wine matures for many years in the underground cellars of the winery to resurface for release 10 years after its creation. Etos Cabernet Sauvignon has a deep blackish garnet colour. Decanting shortly before serving it cellar cool at 16-18°C is recommended.

Nose

This mature wine is quite complex with a bouquet of red fruits, raspberry jam and a floral scent of violet petals which integrates harmoniously with cedar, tobacco and sweet chocolate.

Palate

The mouthfeel is rich and broad with an impressive structure full of generous tannins and freshness for balance and a tireless finish.

Pairings

Etos Cabernet Sauvignon pairs perfectly with veal cuts, leg of pork, game, truffle dishes and aged cheeses.
