PROTECTED GEOGRAPHIC INDICATION PANGEONEtos is a cellar and bottle-aged, mature wine that is released in limited quantities as it is made only in exceptionally good vintage years and exclusively from the Estate’s best vines. In 2016 the maiden 2006 vintage of Etos Merlot was released. The harvest year was excellent for the Merlot variety, which is grown in the limestone and clay soils of a very low crop yielding spot of the Estate. After passing through new French oak barriques, the wine matures for many years in the underground cellars of the winery to resurface for release 10 years after its creation. Etos Merlot has a deep blackish garnet colour. Decanting shortly before serving it cellar cool at 16-18°C is recommended.
NoseThis mature wine is quite complex with a bouquet of red fruits and plum that are harmoniously interspersed with cedar, spice, vanilla, dark chocolate and nutmeg.
PalateThe palate is beautifully poised, generous and intensely fruity with ample robust tannins that offer a firm structure and a long aftertaste.
PairingsEtos Merlot accompanies veal cuts, leg of pork, wild boar with sautéed plums and aged cheeses.
