Etos is a cellar and bottle-aged, mature wine that is released in limited quantities as it is made only in exceptionally good vintage years and exclusively from the Estate’s best vines. In 2016 the maiden 2006 vintage of Etos Merlot was released. The harvest year was excellent for the Merlot variety, which is grown in the limestone and clay soils of a very low crop yielding spot of the Estate. After passing through new French oak barriques, the wine matures for many years in the underground cellars of the winery to resurface for release 10 years after its creation. Etos Merlot has a deep blackish garnet colour. Decanting shortly before serving it cellar cool at 16-18°C is recommended.
