The Vineyard<\/h1>\n\n\n\n

The privately owned vineyard of Ktima Biblia Chora encompasses an area of about 80 ha and has been organically farmed since day one. The vineyard encircles the estate and is located at an altitude of 380 metres above sea level, drawing the eye to the Aegean Sea in the distance.<\/p>\n\n\n\n

The Mediterranean climate, characterised by mild winters and hot summers, is influenced by sea breezes and colder air descending from the contours of Mount Pangeon at nighttime. Temperature differences between day and night extremes are large, which makes the grapes mature slowly. This effect benefits the style of wines by giving them a firm backbone, fresh natural acidity, tannic structure and a noble finesse.<\/p>\n<\/div>\n<\/div>\n<\/div>\n<\/div>\n<\/div>\n<\/div>\n\n\n\n

The vines are meticulously cared for and with great respect for the environment, its flora and fauna and human life. They are planted at a density of 4000 plants per ha in a flinty, calcareous and loamy soil that is arid and well drained.<\/p>\n\n\n\n

All vineyard work, including grape picking, is done by hand and in compliance with recognised organic farming standards.<\/p>\n<\/div>\n<\/div>\n<\/div>\n<\/div>\n<\/div>\n<\/div>\n\n\n\n

The varieties that are nowadays grown at Ktima Biblia Chora are the Greek Assyrtiko, Agiorgitiko and Vidiano as well as the international Sauvignon Blanc, Chardonnay, Semillon, Gew\u00fcrztraminer, Syrah, Cabernet Sauvignon, Merlot and Pinot Noir.<\/p>\n<\/div>\n<\/div>\n<\/div>\n<\/div>\n<\/div>\n<\/div>\n\n\n\n

An unidentified local red variety native to Pangeon was discovered by chance and, after years of research and DNA testing, it turned out to be an old Greek variety that is nonidentical to any other Greek or foreign grape. It is propagated and grown at the estate, namely for the Biblinos Red and Ros\u00e9 labels. For experimental purposes, another 36 different Greek grape cultivars are cultivated in a small vineyard block of 0.15 ha that is accessible to visitors of the estate. The aim is to establish their adaptableness to the region and potential for the creation of new quality wines.<\/p>\n<\/div>\n<\/div>\n\n\n\n

All wines are estate grown, produced and bottled, and aim to express the regional uniqueness of the Pangeon land with great varietal clarity and power. Careful vineyard husbandry and passionate winemaking are underpinned by the experience and craftsmanship of the two high-profile Greek winemakers who embrace regional traditions and modern technology.<\/p>\n<\/div>\n<\/div>\n<\/div>\n<\/div>\n\n\n\n

The Winery<\/h2>\n\n\n\n

At Ktima Biblia Chora, respect for tradition and craftsmanship go hand in hand with due diligence and state-of-the-art technology.<\/p>\n\n\n\n

The winery is equipped with the most up-to-date gear such as a crusher-and-destemmer, pneumatic presses, stainless steel fermentation and cold-stabilisation vats with automated temperature control systems.<\/p>\n\n\n\n

The winemaking facility was purposely built on two different floors to maximize the efficiency of the winemaking process, particularly during harvest.<\/p>\n<\/div>\n<\/div>\n<\/div>\n<\/div>\n<\/div>\n<\/div>\n\n\n\n

The estate\u2019s own laboratory and highly-trained staff conduct strict quality analysis and controls at all critical control points of the production process so as to guarantee wines of excellent quality that meet the health and food safety standards of the applicable ISO 22000<\/strong><\/a> food safety management system.<\/p>\n\n\n\n

Though Ktima Biblia Chora doesn\u2019t advocate any ethical food choices, all wines are certified as vegan.<\/p>\n<\/div>\n<\/div>\n<\/div>\n<\/div>\n<\/div>\n<\/div>\n\n\n\n

There are two separate cellars where a contingent of French oak barriques imparts beneficial characteristics to the wine in temperature and humidity stable conditions.<\/p>\n\n\n\n

Certain labels are left to age in bottle in designated underground maturation vaults and all wines are bottled at the estate prior to release to market.<\/p>\n<\/div>\n<\/div>\n<\/div>\n<\/div>\n<\/div>\n<\/div>\n\n\n\n

Ktima Biblia Chora<\/a> has been certified with the \u00ab\u0395\u039b\u039b\u0391-\u0394\u0399\u039a\u0391 \u039c\u0391\u03a3\u00bb<\/a><\/strong> compliant since 2018 after having satisfied all quantitative and qualitative requirements which stipulate that the estate must be an environmentally and socially responsible Greek-owned business that is located in Greece and makes Greek products whilst it safeguards the health and safety of the employees, the consumers and its products.<\/p>\n\n\n
